The role of the oyster packer is to select, grade and pack oysters in order to reach the market in optimum condition. Each oyster in manually placed in the wooden oyster box, of which there are a large range of sizes and are cupped side facing down to ensure that optimum quality is maintained from packer to consumer. Each box is clearly marked with its packing date and carries a sanitary label, in compliance with legislation.
