A UNIQUE ENVIRONNEMENT
The clean, unpolluted waters around Ireland’s 7,500km coastline are rich in aquatic life and form an exceptional environment for growing oysters. The rough Atlantic waters which shape the Irish coastline are confronted with the warm waters of the Gulf Stream and the cold fresh waters which flow off the Irish bog lands. Over 12,000km² of turf bog is present in Ireland which makes it one of the last remaining ecosystems of this type in Europe.
UNIQUE OYSTER FARMING
Oyster culture is probably one of the most environmentally friendly types of farming as it doesn’t require any entrants to be added from the exterior (neither feed nor medication). It has also an extremely low and often negative carbon footprint. Oysters feed themselves on elements which are naturally found in the seas where they grow. The oyster farmer’s task is to simply accompany the natural growth of oysters by managing stocking densities and thereby naturally influencing shell shape and growth rates. Irish producers concentrate their efforts on obtaining oysters of high quality by maintaining low stocking densities and choosing growing sites in areas of clean waters which are rich in phytoplankton resulting in harmonious oyster growth and good growth rates.

Oysters have many qualities. Their meat is delicate with a succulent texture and a crisp taste with a slight iodine flavour. These qualities have conquered the passion of many connoisseurs.
