The French oyster opening championship took place in Bercy Village on Friday the 7th of Octobre 2011, from 15h00 to 17h30. 12 professional French oyster openers participated. M. Francisco PIRES, opener at the restaurant L’huîtrier in Paris, won the 2011 edition. He held the fastest time at 5 min 33 as well as the best presentation.
